Ingredients

800 g mixed tomatoes
2 tablespoons Bister Dijon mustard
1 tbsp balsamic vinegar
A few basil leaves
1 tbsp olive oil
1 roll puff pastry
Salt and freshly ground pepper
Preparation
Preheat oven to 100°c
Wash and slice tomatoes thinly, or halve lengthwise for cherry tomatoes.
Place the pastry in a pie dish and prick the base. Bake for 5 minutes.
Remove pastry from oven. Put the Bister Dijon mustard on the bottom, add the tomatoes on top in a thick layer. Season with salt and pepper.
Brush tomatoes with olive oil and balsamic vinegar.
Return to the oven at 180° for around 40 minutes, depending on the power of your oven.
When the tomatoes are golden brown, remove the tart from the oven and add the basil leaves.
Tip: For a more gourmet dish, crumble some feta or goat's cheese over the top and serve warm - it's a delight!
